Coffee & Butterscotch pastry

 





















👍 Ingredients
    
     1 chocolate cake (see pg.94/97)
       CREAMICING
       300 g cream, 1/2 cup icing sugar
       2 tsp butter scotch essence
       COFFEE SYRUP (MIX TOGETHER)
       1 cup water, 1/4 cup powdered sugar
       2 tsp coffee, 1 tsp butterscotch essence
       OTHERINGREDIENTS
      100 g cooking chocolate - scrape with a
      Peeler to get a few curls, then cut the 
      rest into pieces, see tip
     2 tsp coffee powder mixed with 2 tsp
     Water 

👍 Method
 
 1. Microwave a chocolate cake in a 10"
     square dish for 5 minutes. Cut into 
     two horizontally when it cools.
 
2. Beat cream till slightly thick. Add icing
    sugar & essence. Beat till soft peaks 
     Form.
3. Microwave chocolate pieces in a bowl
    For
   1 minute. Mix well to make it smooth.
    Add 1 cup of whipped cream to get
   choco- cream. To the remaining cream,
   add 2 tsp coffee mixed with water to get
   coffee cream.
4.Soak cake with coffee syrup. Sandwich
   with choco - cream. Cut cake into 2"
  squares. Cover each piece with coffee-
  cream. Serve topped with a chocolate
  curl.
