Corn And Bean Burritos

Ingredients

100 grams sweetcorn kernels
250 grams sprouted beans,blanched
4 refined flour tortillas
  ½cup grated mozzarella
   Cheese
  Salt to taste
  10-12 black
   Peppercorns, crushed
   1 tablespoon lemon juice
   1 medium tomato,chopperd
    ½ cup shredded lettuce
     2 spring onions, chopped
    2 green chillies, chopped
    ½ cup salsa
     Chilled sour cream, to serve


Method
 
*  Preheat the oven to 200°C/400°F/ Gas Mark 6.
*  Mix the cheese, salt,crushed peppercorns, lemon juice and sprouted beans in a bowl.
* In another bowl, mix together the tomato, lettuce and spring onions thoroughly. Add the corn and green chillies and mix.
*Place the tortillas on a plate. Layer equal portions of the cheese and bean mixture and the corn and tomoto  mixture on each tortilla. Sprinkle the salsa on top and fold each tortilla over.
  *Arronge the tortillas in abaking dish and bake for twenty minutes.
Serve hot with the chilled sour cream.
