* Ingredients
1 large capsicum - cut into 1" pieces 3 carrots - cut into thin fingers 10-12 french beans-1"pieces
1 cup freshly grated coconut
1 cup water
2 tbsp oil, ½ tsp mustard seeds
1 tsp ginger and ½ tsp garlic -chopped 1 large onion-chopped,
1 tsp salt 2 tsp ground coriander
½ tsp garam masala
½ tsp turmeric (haldi) powder
1 green chilli- cut into thin long pieces
* Method
1. Blend the grated coconut and water together in a mixer till smooth. Keep the coconut milk aside. You can also use 1 cup of ready made coconut milk.
2. Microwave oil, mustard seeds,
Chopped ginger, garlic, onion, dhania powder, garam masala, haldi and salt for 5 minutes.
3. Add vegetables, mix and microwave for 3 minutes.
4. Add the prepared coconut milk and green chilli. Microwave for 6 minutes. Serve.
